Day 1: Spanish lentils from a jar with potatoes and chorizo
This is Day 1 of my own pantry challenge, seven days of dinners from the jars on my shelves. Can what you eat and eat what you can ;)
First up: a jar of my home-canned Spanish lentils, canned on September 18.

Tonight's dinner
I opened the jar, tipped the lentils into a pot and heated them up. That's really all the cooking the lentils needed, because all the work was done back in September ;) You'll find the recipe in my post on canning Spanish-style lentils.

While they heated, I boiled some potatoes and fried slices of Spanish chorizo. I served the lentils with the potatoes, put the chorizo on top, added a sprig of parsley and, of course, some crusty bread on the side.

Fresh extras: potatoes, chorizo, parsley and bread.
Jars I used
1 pint of Spanish lentils
Before you open a jar

Tomorrow: Swedish meatballs
