Day 2: Swedish meatballs from a jar with mashed potatoes

This is Day 2 of my own pantry challenge, seven days of dinners from the jars on my shelves. Yesterday was Spanish lentils with chorizo, and today we're heading to Sweden ;)

Tonight's jar: my home-canned Swedish meatballs, canned on November 27/11 2025.

Tonight's dinner

I heated the meatballs and turned the liquid from the jar into a quick gravy. I thickened it with a little corn starch and added a splash of soy sauce and some cream.

Gravy ingredients: a jar of corn starch, a bottle of Kikkoman soy sauce and a carton of cream

I served the meatballs and gravy with mashed potatoes, lingonberry jam and a sprig of parsley.

1 pint of Swedish meatballs

Curious about canning this one? Stay tuned, I'll be canning some more of it soon and will of course write a post about it ;)
